Academy PROGRAMME

  • This program is designed for those who are interested in learning authentic Cantonese dim sum making techniques in a private setting with the restaurant’s head chef. Tutored by Ivan Yuen, Chef de Cuisine of Shanghai Terrace, you will spend two hours with the chef in the restaurant’s kitchen. You will gain an overall knowledge of traditional Chinese ingredients involved in everyday cooking, techniques in dim sum making, ingredient selection, menu planning, tasting for final seasoning adjustments and plate presentations. A Chinese Tea Ceremony experience is also a part of your experience. Following your class you will enjoy a four-course dinner in Shanghai Terrace, with wine pairings. A photo book of your experience in the kitchen will be provided upon departure.

    • Pinkies Up

      Your Chinese immersion program begins with a 30-minute Tea Appreciation Class where you will learn a brief history and types of Chinese tea as well as the health benefits of drinking tea, followed by a demonstration of a traditional Chinese Tea Ceremony, and finally you will experience how to appreciate and enjoy tea.

       

    • Mastering Dim Sum

      Next you will don your personalized Chef’s jacket and join Chef Yuen in the Shanghai Terrace kitchen to learn the intricacies and techniques of Dim Sum making.

       

    • Dinner Is Served

      Following the class, it’s time to freshen up for dinner. You’ll return to Shanghai Terrace for a four-course dinner, including the items you helped to create. Your dinner can include wine pairings.

  • You will be a part of the process first hand from creating design concepts of the weekly floral displays all the way to the perfect placement of these beautiful designs as they enhance the elegant atmosphere of The Peninsula Chicago. You will have a personalised tour of the floral warehouse and interact with the design team as they strike up new concepts and plan the next week’s floral installations. You will witness the ordering process, how vessels are selected and learn how the concepts come to life. Champagne, tea sandwiches, a monogrammed apron and floral sheers, plus a take home arrangement you helped create is all included in this unique experience.

    • Spring Into Inspiration

      You will be transported via the hotel’s house car to Kehoe Designs’ floral and design warehouse. Gregory Hyder, The Peninsula Chicago’s Director of Style, will join you on the ride to explain more about the hotel’s style and how ideas are turned into reality for special events and holidays.

       

    • Stop And Smell The Roses

      Upon arrival to Kehoe Designs, Champagne and tea sandwiches will be served and you will be greeted by the mother-daughter design team and provided a tour of the warehouse.

       

    • Flowers Fulfilled

      The designers will walk you through the process of creating the weekly theme or story in flowers for the hotel. Once the inspiration is determined, the design process begins, first with illustrations and then a visit to various areas within the warehouse. Next the vessels are selected, followed by pulling the perfect blooms and the design begins to take shape as the arrangements are created. A few finishes touches and the concept has been brought to life!

  • This once-in-a-lifetime experience is ideal for the young lady who aspires to be the most regal princess in the kingdom. She will arrive at the hotel incognito, and once she enters her room, the transformation to royal princess commences. A “staff of attendants” will be on hand to provide hair, makeup and nail services, followed by a royal fitting of a gown and tiara. During Afternoon Tea, the princess-in-training will learn what it takes to be a true princess--the skills and manners she must possess, including how to greet her royal subjects, how to drink tea in a refined manner, how to do a proper curtsey and more.

     

    A horse-drawn pumpkin-shaped carriage will then whisk you and your little princess to a shopping spree at a nearby store of choice. Upon return to her majestic palace (aka The Peninsula Chicago), the princess will have a red carpet arrival, she will be greeted by her prince and presented with glass slippers, the Keys to the Kingdom and a personalized Princess Proclamation. Her royal subjects (aka the hotel staff) will bow and curtsey upon her return as she reigns over her kingdom.

    • Your Journey

      The Princess for a Day begins mid-morning where the princess-to-be is greeted curbside by her lady-in-waiting and her staff of pages to escort her to her suite. The princess is welcomed with amenities and a new princess outfit to wear for the day, making the transformation official.

       

    • Becoming a Princess

      A “staff of attendants” arrives to provide hair, makeup and nail services, followed by a royal fitting of her gown and tiara. Peter Bear, the hotel’s mascot, also makes a visit and presents movie selections for the princess to enjoy during her pampering princess prep.

       

    • Princess Etiquette Class

      The princess is then escorted to her “princess-in-training” class where she will learn how to eat, drink and entertain like a royal. Practice makes perfect as the princess and entourage enjoy Afternoon Tea and test her new-found princess skills.

       

    • A Princess in the City

      Departing from the hotel a poised and prettied princess, she is greeted by her royal subjects as her horse-drawn, pumpkin-shaped carriage awaits. The princess is given a floral presentation carriage-side before boarding to a ride around her kingdom for a shopping spree befitting of a true princess.

       

    • The Castle Awaits

      The princess returns to her castle to be greeted by Prince Charming with a glass slipper. She is presented with Keys to the Kingdom by the hotel doorman and a Page bestows a proclamation of her kind and gracious ruling over the land. Royal subjects greet her return as she retires for her beauty sleep.

       

    • Not Just A Fairy Tale

      The princess wakes from her peaceful slumber with wonderful memories of yesterday’s fairy tale adventure. Peter Bear bids farewell with gifts fit for a queen, including a photo of her experience as a treasured keepsake.

  • This programme is specially designed for guests who are interested in Chicago’s historic architecture from the amazing vantage point of the Chicago River. The experience takes place aboard a private, 48-ft yacht and is tailored for two to four guests. The 90-minute tour highlights Chicago’s iconic buildings and historic architectural landmarks and can be customised based on special interests.   • This programme is designed for your little ones with an interest in sweet treats.       An interactive class in the hotel’s pastry kitchen conducted by Chef will educate your Little Baker on how to make desserts such as cookies and cupcakes decorate them to perfection (with some taste tester steps along the way)!
